Eggplant-Parmesan Toast

Eggplant-Parmesan Toast

Ingredients:

  • 1 medium-sized eggplant
  • 1 slice fresh mozzarella cheese (any type of cheese besides cheddar works)
  • 1 tbsp parmesan cheese
  • 1 slice tuscan/sourdough bread
  • 1 tbsp marinara sauce
  • 1/2 onion (chopped)
  • 1 tomato (chopped)
  • 2 cloves garlic (chopped)
  • 1 tbsp oil
  • salt and pepper (to taste)

Instructions:

  1. Wash the eggplant. Wrap it in aluminum foil drizzled with oil and bake for 45 minutes – 1 hour.
  2. When cooked, remove the skin of the eggplant and mash with a fork in a bowl.
  3. Heat the remaining oil in a pan, and sauté the onion and garlic.
  4. After a few minutes, add the tomatoes and cook for five minutes.
  5. Add the eggplant to the mix and cook for 5 more minutes.
  6. Sprinkle the salt and pepper atop the eggplant.
  7. Spread the eggplant on top of a slice of bread so the eggplant covers the entire slice.
  8. Next, spread the marinara sauce atop the bread. Place the cheese slice on top of the bread.
  9. Sprinkle the parmesan cheese on the bread and toast until the cheese melts. Serve when hot.

*Remaining eggplant can be used to create more eggplant-parmesan toasts.

French Toast

Serves 4 People

Ingredients:

  • 4 slices of bread (any type works)
  • 2 cups soy, almond, or regular milk
  • 1 tbsp nutritional yeast
  • 2 tsp oil
  • 1 tsp corn starch
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp agave syrup
  • 2 tbsp pancake mix or all purpose flour
  • 1/4 tsp turmeric powder
  • 1 tsp confectioners’/powdered sugar
  • whipped cream (optional)

Directions:

  1. Place all ingredients, other than bread, powdered sugar and whipped cream, into a bowl and mix well.
  2. Heat a nonstick pan (grease the pan with a thin layer of butter).
  3. Dip each slice of bread into the batter and place on nonstick pan.
  4. Cook on low heat, each side until the bread becomes golden brown in color.
  5. Top with powdered sugar. Fresh fruit and whipped cream may be added.

Avocado Sliders

Ingredients:

  • 1/2 fresh avocado slices
  • 2 “Ozery Bakery” Multi-grain Sliders, minis (found at Whole Foods)
  • 1 slice pepper jack cheese
  • 1/4 cup of any brand Bruschetta sauce (marinara sauce works)
  • marinated artichokes (optional)

Instructions:

  1. Slice the Multi-grain sliders in half.
  2. Spread the Bruschetta sauce on both sides.
  3. Top with avocado slices, cheese and artichokes.
  4. Toast until cheese melts. Serve warm.

Spicy + Sweet: The Ultimate Apple

Ingredients:

  • Tuscan Bread (any sourdough bread works)
  • 1 apple, peeled and sliced
  • Jack-Pepper/Jalapeño cheese (any spicy cheese works)
  • 1/2 tsp olive oil
  • 1 tsp mustard (sauce)
  • 1/2 tsp agave syrup
  • 1/2 tsp lemon juice
  • salt and pepper (to taste)

Directions:

  1. Marinate the apple slices in agave syrup, olive oil, mustard, and lemon juice for at least 1/2 hour.
  2. Place the marinated apple slices on a piece of bread.
  3. Top the apple slices with any (spicy tastes better) cheese slices.
  4. Toast the bread slice in the oven until the cheese melts completely.

*Serve hot.
